Busy Weekend, exhausting Monday and feeling uninspired to think of something for dinner?


How about Chicken Breast Stuffed with Goat Cheese, Wrapped in Bacon?

After a busy weekend and an exhausting Monday at work add in getting the kids back into the school routine I so often find it difficult to decide on something to cook for dinner on a Monday evening. I want it to be something healthy and wholesome to get the week started but at the same time I want it to be quick and easy. This brings me to my “Mouth Water Mondays” weekly article.

I love making this chicken dish. What I do differently when I make my version is I don’t fry it first, I just put it straight into the heated oven. The bacon still crisps up and the chicken is just so moist and delicious inside. I often serve this with rice and gravy, mashed potato or just a big salad. Alternatives to the goats cheese that I’ve used before are; feta, blue cheese or a simple white everyday cheddar cheese.
